Ingredients | Preparation |
1 x 400g tin of kidney beans
1 x 400g tin of black beans 1 x 400g tin of chickpeas 1 x 400g of chopped tomatoes 350g of broccoli 1 large red onion 3 fat garlic cloves Ginger chopped (optional) Sea salt (iodised) and pepper or 1 tablespoon of Bouillon powder 2 tablespoons of Herbs De Provence 1 tablespoon of cayenne Olive oil 1 juice from a lemon |
Pour olive oil into a cast iron pot covering the bottom thinly
Add herbs and stir Add onions, garlic and ginger – fry until golden brown Add 3 cans of beans Add chopped tomatoes Stir all the above slowly and cook for 15 min Add cut up broccoli Add remaining spices (cayenne, salt/pepper or Bouillon, lemon juice) Cook for additional 15 min stirring occasionally Serve hot in a bowl with a sprinkle of flaked almonds or ground walnuts |
I really love beans and could eat this dish every day. Beans are filling and warming with a good amount of carbohydrates and protein.

- You can reduce the cost of the recipe by buying raw beans, soak them overnight and cook it in a pressure cooker.
- I love putting lemon, cayenne, paprika in everything – these are all good for your digestive system.
- Enjoy seconds for lunch the next day with half an avocado. Yum! 😋
